Healthy Pumpkin Spice Muffins
It’s that time of year again… Hocus Pocus is on repeat, Target’s fall decor game has stepped up, and pumpkin is a regular ingredient in…everything. I wouldn’t call myself entirely basic but…pumpkin spice anything is my kryptonite. So.. I’ll let you draw your own conclusions.
One of the things I love about pumpkin spice is the unique flavor. When you are cooking with pumpkin spice, you really don’t need that much sugar or fillers to yield flavorful food.
Like many, I have been baking with pumpkin pretty religiously every fall, and have been on the hunt for a healthy, but flavorful muffin recipe. With no a refined sugar/butter, these muffins are healthy, tasty, and very easy to make! They are great for breakfast, dessert, a snack, a midnight snack…the list goes on. Plus, your house is guaranteed to smell amazing when you bake these.
{Healthy Pumpkin Spice Muffins}
Serves 12
Ingredients:
1 cup whole wheat flour
1 cup white flour
2 tsp pumpkin pie spice
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 15 oz can pumpkin
2 tbs coconut oil
2 eggs
2/3 cup agave nectar
2 tsp vanilla
1/2 cup pecans
Directions:
Preheat the oven to 350 degrees.
In a medium sized mixing bowl combine the flours, pumpkin pie spice, baking soda, baking powder and salt.
In a large mixing bowl whisk together the eggs, pumpkin, coconut oil, agave, and vanilla.
In thirds, fold the dry ingredients into the wet ingredients and stir well to combine.
Scoop the batter evenly into a lined muffin tray.
Blend the pecans in a high powder blender until they are very finely chopped. Top the muffins with the pecans and press into the batter.
Bake the muffins for 18 minutes, or until a toothpick inserted comes out clean.
