Herb Crusted Salmon
Over the weekend I was at my local market and they had an herb crusted salmon in the deli section. I immediately had flashbacks of when my mom used to make Ina Garten’s Roasted Salmon with Herbs. It was a family favorite every time. I created my own rendition of this recipe because while I love salmon, it can get a bit bland, and the herbs really enrich the filet.
What I love about this recipe is that the herb ‘crust’ is literally just herbs, garlic, lemon and olive oil. It is so healthy and so good! Plus, it’s a breeze to whip up.
I used thick cut salmon filets here, but you can absolutely do this with a longer filet for a dinner you are hosting. Add in some red potatoes and veggies and you have yourself an easy, crowd pleasing, meal.
{Herb Crusted Salmon}
Serves 2
Ingredients:
2 (1 - 1 1/2 inch) salmon filets
1/2 cup parsley
1/4 cup chives
2 tbs dill
1 tsp minced garlic
Juice from 1 lemon
2 tbs olive oil
1 tsp garlic
Salt and pepper to taste
Directions:
Preheat oven to 425.
Mince the parsley, chives and dill. Add to a mixing bowl with minced garlic, lemon juice and olive oil. Stir well to combine.
Generously season the salmon filets with salt and pepper. Top each filet with the herb mixture and lightly press into salmon.
Place herb crusted salmon in a parchment paper lined baking dish.
Bake for 13-15 minutes, depending on how thick the filet is, until desired doneness.
