Watermelon Salad

It's Watermelon season! I love cooking with watermelons in the summer because they are so seasonal. Watermelons are super sweet and have a crunchy texture so they’re great in salads! 

This is my go-to for all summer BBQs. It takes about 5-10 minutes to make and is always a total hit!

This watermelon salad calls for only 3 essential ingredients. Watermelon, mint and feta. The combination is simple and flavorful. If you want to add some chopped pistachios they provide a great crunch to this dish!

{Watermelon Salad}


Serves 6-8

Ingredients:

  • 1 medium sized watermelon

  • 3 tbs minced mint

  • 1 cup crumbled feta

  • Optional : pistachios

Directions:

  1. Cut watermelon in half, remove rind, and dice into bite sized pieces.

  2. Place watermelon pieces in a bowl and add mint and feta. Toss together.

  3. Top with pistachios for a little extra crunchy flavor

...that's it. Literally.
