Pine Nut Caprese Salad
Summer is here. Which means it’s socially acceptable to eat thick pieces of cheese and call it a salad. I mean who doesn’t love a good caprese salad!? What sets this recipe apart from your standard caprese is the pine nuts and sweet balsamic glaze. I brought this to bookclub recently and it was gone within ten minutes. Which just so happens to be the time it takes to make!
I love to cut the tomato and mozzarella into thick slices . It makes the presentation look nicer, and feels a bit more substantial to eat.
This is a real easy one that requires only 6 ingredients and is perfect for a light summer appetizer. I also served this as the filling for a sandwich the other day and um… thank me later.
{Pine Nut Caprese Salad}
Serves 4-6
Ingredients:
2 large heirloom tomatoes
8 oz mozzarella
1/4 cup chopped basil
2 tbs olive oil
2 tbs pine nuts
2 tbs balsamic glaze
salt and pepper to taste
Directions:
Cut tomatoes and mozzarella into slices (about 1/4 inch thick).
Toss tomatoes and mozzarella in 1 tbs olive oil and season with salt and pepper. Layer into serving dish of choice, alternating between tomato and cheese slices.
Dice basil and sprinkle evenly over layered tomato/mozzarella slices.
Evenly sprinkle pine nuts over the caprese, and top with remaining olive oil and balsamic glaze.
