Antipasto Skewers
World’s easiest appetizer? These antipasto skewers might take the cake. With Superbowl right around the corner I’ve been brainstorming some easy, crowd pleasing recipes. I think I overdid it last year with the Mac n Cheese bar…
These skewers are great for many reasons : 1) You can really put anything you want on them. I chose a combination of veggies, cheese and even some ravioli. Salami? Go for it. Bacon? Sure. More cheese? Definitely. 2) You can prep and fully assemble hours before guests arrive or even the night before. These keep really well covered in the fridge. 3) You don’t have to worry about anything “getting cold” or flavor profiles changing.
You’ll notice there aren’t any “exact” measurements for the ingredients. It’s really up to you how many skewers you want to make and how much you want to load them up. I got the following ingredients and used about 1/2 of everything, which yielded about a dozen skewers. You can easily save the leftover ingredients for next time.
I got my skewers on Amazon, but you can find them at Target, Walgreens and most grocery stores.
{Antipasto Skewers}
Ingredients:
Bamboo skewers
Red bell pepper
Artichoke hearts
Kalamata olives
Mozzarella balls (I used Trader Joe’s marinated mozzarella)
Cherry tomatoes (mixed medley for variety)
Spinach Ravioli
Basil
Sundried Tomatoes
1-2 tbsp olive oil
Salt and pepper to taste
Directions:
Cook the ravioli according to package instructions. Strain and run under cold water to expedite the cooling process and stop cooking. Toss the ravioli in olive oil, salt and pepper.
Slice the red bell pepper into bite size pieces and the artichoke hearts in half.
In whichever order you prefer, assemble your ingredients onto the skewers. I assembled most of mine as follows : red bell pepper, mozzarella ball, artichoke heart, cherry tomato, basil, mozzarella ball, olive, ravioli.
Once you’ve assembled all of your skewers, drizzle with olive oil and season with salt and pepper.
