Burrata and Grilled Peach Toast
Need a quick, easy, delicious and aesthetically pleasing appetizer? Pop by the cheese aisle (I'm giving you an excuse here) and snag some burrata. Burrata has been all the craze recently (sorry brie, I still love you), and for good reason. Its rich and creamy and can easily be spread over some toast (or eaten with a spoon).
Since burrata is naturally salty, I love to pair it with something sweet. Enter : grilled peaches. Why grilled peaches? The grilling makes the peaches softer and caramelized providing an extra decadent flavor.

{Burrata and Grilled Peach Toast}
Yields 12
Ingredients:
1/2 semi sweet baguette
Burrata
2 peaches
Olive oil
Directions:
Turn on broiler to high.
Slice the baguette and arrange sliced bread on a cookie sheet, lightly coating tops with olive oil. Broil for 3 minutes, or until bread is toasted. Keep an eye so they don't burn!
Remove the bread from the oven. While it is cooling, slice the peaches.
Over medium high heat, grill the peaches for 1-2 minutes a side, or until lightly browned and slightly soft.
Spread burrata over toast and top with grilled peach.
