Almond Butter Protein Bites
These puppies are basically healthy cookie dough bites. Yes, you heard me right. Plus, they are healthy and super simple and easy to make! 5 ingredients… whhhhat!?
I love snacking on these for a little boost of energy. Or even having them for dessert! Someone hand me a spoon!
If you don’t like coconut, feel free to skip that ingredient. I’ve also added chia seeds before and it’s been delicious.
These will keep for a few days in an airtight container in the fridge, or you can freeze them!
{Almond Butter Protein Bites}
Yields 10-12
Ingredients:
1 cup pitted dates
3 tbs almond butter
1/4 cup coconut
2/3 cup oats
1 tsp vanilla extract
Directions:
Soak the pitted dates in a bowl of warm water for about 15 minutes or until playable.
Drain the dates, and combine with peanut butter and vanilla extract in a food processor (or blender) until a thick paste forms.
Transfer to a bowl and fold in oats and coconut.
Form the 'dough' into balls and place on a baking sheet lined with parchment paper.
Place in freezer for about 15 minutes to set.
