Kale Baked Eggs
I remember having baked eggs at brunch a few months ago and thinking, "I could make this!" Baked eggs have become a full proof breakfast staple in my household. This is one of those dishes that you can get creative with. Layer whatever your heart desires into a ramekin, top with an egg (and of course some cheese), and bake!
For this recipe, I simply sautéd some garlic and kale, placed in a ramekin, and topped with an egg and some cheese. YUM. So easy, healthy, delicious and of course, candid.
For maximum satisfaction, serve with some toast.
{Kale Baked Eggs}
Serves 2-4
Ingredients:
4 eggs
1 cup kale
1 tsp minced garlic
Shredded mozzarella cheese
dill for serving
salt and pepper to taste
Directions:
Preheat the oven to 350.
Sauté garlic and kale over medium high heat until kale is wilted (about 5 minutes).
Assemble 4 ramekins, and evenly distribute kale mixture amongst them.
Crack eggs on top of kale mixture in individual ramekins, and sprinkle with cheese.
Place the ramekins on a cookie sheet and bake for 12-15 minutes, or until eggs are mostly set (eggs will continue to bake in ramekins once removed from the oven, so if they are slightly runny that is OK).
Top with salt, pepper, and dill.
