Crockpot Tortellini Soup
With the weather getting colder and colder, I have been craving basically anything hearty. I hosted a game night last weekend, and wanted to make something easy, warm, and filling. I saw a tortellini soup recipe that looked delicious, and I decided to make my own, but in a crockpot for maximum ease. It was an absolute hit!
This soup is a new go-to hearty, winter recipe. It is seriously so easy. The prep will take you 10-15 min total.
I used white beans to add some additional protein, and coconut milk to make it a little creamy, but still relatively healthy.

{Crockpot Tortellini Soup}
Serves 6
Ingredients:
9 oz fresh tortellini (I used spinach)
28 oz diced red tomatoes
15 oz white beans (drained)
3-4 cups vegetable broth
1 cup diced white onion
1 tablespoon minced garlic
4 cups coconut milk
2 cups kale
1/4 tsp red pepper flakes
Salt and pepper to taste
Directions
Sauté the onion and garlic until lightly browned.
Add to crockpot with tomatoes (not drained), white beans (drained), vegetable broth, red pepper flakes, and salt and pepper to taste. Stir well to combine. Cook on high for 3-4 hours, or low for 6-8 hours.
30 minutes before the soup is done cooking, add the tortellini and kale. Stir and cover. Cook for remaining 30 minutes.
Once the soup is done, add the coconut milk, stirring until creamy.
