Creamy Smoked Salmon Stuffed Avocados
Is there anything better than a perfectly ripe avocado? Why yes, yes there is. A creamy smoked salmon stuffed avocado.
I have been seeing stuffed avocados pop up on food blogs and menus a lot recently. Tuna salad stuffed avocados, caprese stuffed avocados, egg stuffed avocados, etc. I wanted to do a version that could be enjoyed with breakfast, lunch, dinner, or even as a snack. I served these for breakfast with a little toast.
This recipe is super easy to make. The sauce is made with shallots, light cream cheese, lemon, olive oil, and a little dill. The other two ingredients are avocado and smoked salmon!
You'll want to get ripe avocados, but not too ripe (they will be harder to stuff if they are too ripe).
{Creamy Smoked Salmon Stuffed Avocados}
Serves 4
Ingredients:
2 avocados
3 oz smoked salmon
1/2 minced shallot
2 tsp light cream cheese
1 tsp chopped fresh dill
1 lemon
1 tbs olive oil
Directions:
In a medium sized bowl, combine the minced shallot, cream cheese, dill, juice from 1 lemon, and olive oil. Stir well until a creamy sauce is formed.
Cut the avocados in half and remove the pits. With a spoon, make the crater in the avocado a bit larger. If you choose to remove the skin from the avocado, do so carefully by scooping the spoon between the skin and the avocado.
Chop the smoked salmon and combine with the sauce.
Stuff the creamy smoked salmon mixture into the avocados.
